Menemen - A Turkish Breakfast Classic

Traditional way of doing Menemen is to cook it in a copper pan, and all you need is tomatoes, green pepper, a spoon of butter and eggs. However feel free to add your favorite ingredients. It is not wrong to add onions, cheese or even another traditional turkish food soujouk can be added to menemen. 

Ingredients (for 2 people)

  • 5 Piece of Tomatoes
  • 2 Piece Green Pepper (or Bell Pepper)
  • 1 Spoon of Butter
  • 3 Eggs 
  • Yellow Cheese (Optional) 



Cooking times are not very long. Thus I suggest that you chop the peppers and peel & dice the tomatoes before starting to cook. Cut the peppers into thin slices and dice the tomatoes in cubes not thicker than a finger. 

If you have a clean copper pan, i would recommend it for the best result. But if not then use a nonstick frying pan. Heat the butter in the pan until it is barely warm but don't burn it.

Add sliced green peppers. Cook, stirring frequently, until they are soft. 

Add tomatoes to the pan, add salt and black pepper (I also like to add oregano) then close the lid of the pan. Cook for 5-8 minutes on a medium fire, and try not to dry the tomatoes completely.

When the tomatoes are still juicy break the eggs on top. Eggs should not be scrambled and also in the frying pan it should be just stirred for maximum of 2-3 rounds maximum. 

Don't overcook, it is nice to dip a piece of bread to the eggs. You can add yellow cheese on top after steering the eggs.
